A neighbor and I just came home from the Food Bank. I find we get such an interesting assortment of food items there. Today I was given a pound of frozen chicken gizzards, and I’ve never done anything with them before besides feeding them to my cats.
So I just did a search online for a gizzard recipe that uses ingredients I already have on hand … and I actually found one. Voila! Chicken Gizzard Jambalaya will be our dinner tonight.
I also need to figure out what to do with an overabundance of milk. I’d just bought a gallon yesterday … and then my next door neighbor brought me two gallons last night … and then the Food Bank gave me another gallon today. I don’t have any room in the freezer to store the extras, so I’m thinking maybe tomorrow I’ll make a big pot of some sort of milk-based soup. It’s supposed to be rainy tomorrow … sounds like good soup weather to me.
Hey, does anyone have any milk-based soup ideas or recipes using cheap and easily available ingredients?






Too much milk: make yogurt! Then freeze some in ice cube trays for starter.
Milk-based soup is fine, but you could also just freeze the extra milk to be used later when you need it!
Cream of Potato soup. Cream of Tomato Soup. Both are easy to make. Just look up recipes on the web. Heavy on the onion.
Ricotta! Bring 1 gallon milk to 200 degrees (stir frequently to prevent scorching). Remove from heat; stir in 1/3 cup vinegar. Let sit for 5-10 minutes, stirring occasionally, until curds form.
Strain through cheesecloth or a very fine mesh strainer.
The ricotta can be eaten immediately, or frozen for future use.
1 gallon of milk produces 1 lb. =/- of ricotta cheese.
